2 Minute Paleo Oatmeal (Instant Pot Recipe)

Make this healthy paleo, vegan and gluten-free oatmeal in the instant pot or slow cooker. Keep it vegan-friendly by using grade A pure maple syrup. Store unused portion in a container in your refrigerator up to two days. Meal Prep Tip: Double the recipe to make two batches of the nut blend!

Paleo Oatmeal Bowl

Dry Ingredients
_________________________
 ½ cup cashews (raw & unsalted)
 ½ cup pecans
 ½ cup dried coconut (unsweetened, shredded)
 ¼ cup pepitas (shelled)
 1 tbsp flax seed (optional)
  tsp sea salt (optional)
 1 tbsp cinnamon (optional)
 1 dash nut meg (optional)
Wet Ingredients
_________________________
 1 cup water
 2 tbsp coconut oil
 Optional: vanilla extract (organic, non-alcoholic)
Optional Garnishes
_________________________
 2 tbsp grade a pure maple syrup or raw honey
 lite coconut milk
 fresh fruit
 ghee

Add the dry ingredients, cashews, pepitas, pecans, dried coconut, cinnamon and salt to a food processor. Transfer the blended mixture to the Instant Pot.

Add the water, coconut oil and vanilla extract (if using) to the Instant Pot and stir well.

Close and secure the lid. Move the top valve to the “sealing” position to close it. Plug the Instant Pot in. Select the Porridge button. Use the “-” or “+” button to adjust the time to 2 minutes at normal pressure. Alternatively, select slow cook mode and change the cook time to 30 minutes at normal pressure.

Once the pressure cooking cycle is complete, do a quick pressure release. Keep yourself safe with the help of an oven-safe glove. Move the top valve to the “venting” position. Serve in a bowl adding sweetener of choice. Use optional garnishes such as lite coconut milk, fresh blueberries or ghee.
