When my Doctor asked me to start a paleo diet last year to help my gut health and hopefully decrease autoimmune disease symptoms, I wasn’t happy about giving up candy.

My nickname is Candy for a good reason; I love candy!

If following a paleo diet meant I would feel better I was willing to try it.

I haven’t touched prepackaged candy in a year. My health has improved, my inflammation markers have decreased, and I lost 25 pounds. Not sure why I didn’t learn sooner, but it took me a year to discover I could make gummy candies at home with just three ingredients, grass-fed gelatin, cherries, and lemon. This recipe is my favorite to make on Fridays, so I have healthy-treats ready for movie night and the weekend.

Cherry Lemon Gummies Paleo Recipe

Ingredients


1 cup Pitted cherries unsweetened fresh or defrosted from frozen

1/2 cup Lemon juice about 2 large lemons

2 tablespoons Grade A pure maple syrup or raw honey

6 tablespoons Unflavored grass-fed gelatin


Instructions


1. Use a blender to pulse cherries, lemon juice and make syrup until no chunks can be seen.

2. In a small pot over medium-low heat, whisk the mixture and slowly add gelatin in one tablespoon at a time. Continue to whisk vigorously until gelatin is completely dissolved.

3. Pour the mixture into gummy molds; this step might get messy! If you don’t have silicone molds on hand use a baking dish.

4. Place the filled molds in the refrigerator until gummies are completely cold and set. This can take 30 – 60 minutes. The longer, the better and easier it will be to remove them from the silicone molds. Store uneaten candy in the refrigerator.
