Steamed Artichoke

Artichokes remind me of my grandparents and bring back happy childhood memories every time I eat one. My grandma was in charge of preparing it, and my grandpa was in charge of showing us kids how to eat an artichoke. Saving the artichoke heart for my grandpa was our tradition. Those memories are good but not always good enough to motivate me to prepare an artichoke, especially on a hot summer day ha! Electric pressure cookers like the Instant Pot are more popular than ever and for good reasons. I especially like how the Instant Pot keeps the kitchen cooler, saves time, and food comes out flavorful. Below you will find an easy recipe for steaming Artichokes in the Instant Pot.

Steamed Artichoke is easy to make in the Instant Pot. Here's a recipe to get you started.

Ingredients
  • 3 Artichokes (Organic)
  • 1 cup Water
  • 1/2 Lemon (Organic)
  • 1 pinch Sea Salt
Instructions
  1. Prepare your artichokes. Remove any damaged outer leaves. Use a sharp knife to cut an inch off the top of each artichoke.


  2. Use a sharp knife to cut off the steam to make a flat bottom.


  3. Pour water into the Instant Pot and insert the trivet that your IP came with into the water. Place the artichokes on top of the trivet or you preferred steaming basket. The bloom of the flower faces up, bottom of artichoke faces down.


  4. Squeeze fresh lemon juice on top of the artichokes.


  5. Sprinkle a dash of salt on top of the artichokes.


  6. Secure lid, close the valve, point it to "sealing" and plug in the Instant Pot.


  7. Select the "Manual" button, and use the “-“ or “+” to adjust cook time to 22 minutes.  


  8. Once cooking time is complete, hit “cancel” to turn off the Instant Pot. Do a quick-release pressure by moving the top valve to the “venting” position. Keep yourself safe with the help of an oven safe glove. 


  9. Remove the lid and check the artichokes for doneness. Carefully remove artichoke from the IP and place them on serving plate. Your artichokes are now ready to be enjoyed!

    (Optional: Sprinkle a little smoked paprika on them before serving)


  10. Options for dipping sauce: Ghee, grass-fed butter, mustard, or paleo mayo.
