Make this healthy paleo oatmeal in the instant pot or slow cooker.

Keep it vegan-friendly by using grade A pure maple syrup.

Store unused portion in a container in your refrigerator up to two days.

Meal Prep Tip: Double the recipe to make two batches of the nut blend!


Dry Ingredients


1/2 cup raw cashew unsalted

1/2 cup pecans

1/2 cup dried coconut 

1/4 pepitas shelled

1 tbsp flax seed (optional)

1/8 teaspoons sea salt (optional)

1 tablespoon cinnamon (optional)

1 dash nutmeg (optional)


Wet Ingredients


1 cup of water

2 tablespoons coconut oil

1 teaspoon vanilla extract non-alcoholic and organic (optional)


Instructions


Add the dry ingredients, cashews, pepitas, pecans, dried coconut, cinnamon and salt to a food processor.

Pulse mixture for 30 seconds

Transfer the blended mixture to the Instant Pot. 

Add the coconut oil and water to the Instant Pot and stir well. 

Close and secure the lid.

Move the top valve to the “sealing” position to close it.

Plug the Instant Pot in.

Select the Porridge button.

Use the “-” or “+” button to adjust the time to 2 minutes at normal pressure.

Alternatively, select slow cook mode and adjust the cook time to 30 minutes at normal pressure. 

Once the pressure cooking cycle is complete, do a quick pressure release.

Keep yourself safe with the help of an oven-safe glove. Move the top valve to the “venting” position.

Serve in a bowl adding sweetener of choice.

Use optional garnishes such as lite coconut milk, fresh blueberries or ghee.
